As part of any HACCP program, new ham products need to have both cook and chill processes validated independently of the oven/chiller control system. Because the large ham producer in the United Kingdom ham producer had a range of product types and different oven/chiller lines, this promised to be a time consuming and potentially expensive operation.
Yet a supermarket chain required a complete set of HACCP validation data for the ham variants supplied. To satisfy the temperature datalogging requirements, the ham producer replaced its miniature single-channel data-loggers with a single Datapaq MultiPaq21 system.
