Aldo De Tuoni, P.E., C.E.M., is a senior process engineer serving the food, feed and industrial markets with more than 20 years of processing experience. He specializes in thermal processing for food applications, specifically vegetable and fruit dehydration, designing processes for new food products in Bühler’s technical laboratories. Aldo also works with customers around the world to optimize existing food processes to reduce energy usage and the environmental impact of food production. He holds a bachelor’s degree in chemical engineering and master’s degree in operations research. He is also a Professional Engineer, registered in North Carolina, and a Certified Energy Manager.

Energy Recovery Analysis: Using the Conveyor Dryer To Dehydrate Fruits and Vegetables
Conveyor drying technology is a large consumer of energy used for a variety of applications, including food dehydration in the fruit and vegetable industry. As the world’s population increases, the enormous challenge of meeting food and energy needs are interconnected. The search for energy efficiencies to reduce the environmental impact of food production has accelerated. This presentation will analyze energy consumption for drying sugar infused fruits, demonstrating several drying scenarios. 1.) Energy used in a natural gas-heated conveyor dryer. 2.) Energy used with advanced control systems. 3.) Energy use with heat exchanging technology that recovers energy by preheating the make-up air. Energy consumption will be analyzed according to different operating parameters and will demonstrate how an energy recovery analysis can achieve a minimal energy reduction of 25-30%. The presentation will also introduce heat exchanger technologies, installation and operation.
